With Stephan® machines, cutting system, mixing, dispersion, emulsifying, homogenization, heating and

The direct steam injection and inert gas injection insure a fast process of cooking and cooling of the product. The vacuum, meticulously controlled, is used to prevent the air from introducing minimice oxidation.
